How it works under audit
A hospital kitchen is judged on what it can prove, not on what it remembers. Every approval, rejection, delivery and issuance is written down with the person, the timestamp and the reason, so the question an auditor actually asks — who agreed to this, and on what basis — has an answer that does not depend on anyone's recall.
Allergens are carried on the product rather than in someone's head. All fourteen EU allergens can be flagged at catalogue level, so the information travels with the item into every recipe and every issuance instead of living on a laminated sheet by the pass.
Batches are tracked with expiry dates, and issuance runs first-expired-first-out by default. That is a small rule with a large consequence: stock rotates the way the paperwork claims it does, and near-expiry items surface before they become waste rather than after.
When something has to be pulled, the trace already exists. Quarantine and recall mode walks a lot forward — which deliveries it arrived on, which kitchens received it, what it went into — so a recall is a query rather than an investigation.
